Southwestern Vegetable Tacos-Cinco De Mayo Recipe

This Cinco de Mayo try a meatless soft taco recipe that's loaded with vegetables, so it Lisa low-fat and high-fiber recipe. You will also get a good serving of protein from the beans. The tacos are stuffed with sauteed vegetables and topped with smoky salsa. Serve with rice and salad for a complete meal.


Ingredients:

• 1 Tablespoon olive oil
• 1 Medium red onion, chopped
• 1 Cup yellow summer squash, diced
• 1 Cup zucchini, diced
• 3 large garlic cloves, minced
• 4 Medium tomatoes, seeded and chopped
• 1 Jalapeno chili, seeded and chopped
• 1 Cup fresh corn kernels
• 1 Cup canned pinto or black beans, rinsed and drained
• 1/2 Cup fresh cilantro, chopped
• 8 corn tortillas
• 1/2 cup smoke-flavored salsa
• Black olives


Preparation:

In a large saucepan, heat the olive oil over medium heat. Add the onion and cook until soft. Add the summer squash and zucchini, and cook for 5 minutes, until tender. Stir in garlic, tomatoes, jalapeno, corn kernels and beans. Cook 5 minutes until the vegetables are tender-crisp. Add cilantro and remove from the heat.

Heat a dry, large pan over medium heat. Not a non-stick pan. Add 1 tortilla to hot pan and heat until softened, about 20 seconds per side.

To serve, divide the tortillas among individual plates. Spread an equal amount of the vegetable mixture on each tortilla. Top each with 2 tablespoons of the salsa. Serves 8.

Florentine Omelette- Breakfast Recipe

A Florentine omelette makes satisfying breakfast. Eggs are rich in protein, amino acids, and vitamins A,D, and E. Eggs are also rich in Choline, which is important for brain health. Another added benefit form eating eggs is you will feel fuller longer until your next meal. This omelette recipe is lower in saturated fat than most recipes because of the soy type of cheese. Have a good breakfast or brunch!




Ingredients:

• 2 eggs
• 2 egg whites
• 3 Tablespoon water
• 1 Teaspoon dried Italian seasoning, crushed
• 1/4 Teaspoon salt
• 8 Ounces mushrooms, sliced
• 1 onion, chopped
• 1 red bell pepper, chopped
• 1 clove garlic, minced
• 4 Ounces spinach leaves, chopped
• 3/4 Cup shredded soy mozzarella cheese



Preparation:

Preheat oven to 200°F. Coat baking sheet with cooking spray.
In a medium bowl, whisk together eggs, egg whites, water, Italian seasoning, and salt. Coat a large skillet with cooking spray, and place over medium-high heat. Add mushrooms, onion, pepper, and garlic, and cook, stirring often, for 4 minutes, or until the pepper starts to soften. Add spinach, and cook for a minute, or until the spinach is wilted. Place in a small bowl, and cover.

Wipe the skillet with a paper towel. Coat with cooking spray, and place over medium heat. Pour in half of the egg mixture. Cook for 2 minutes, or until the bottom begins to set. With a spatula, lift the edges to allow the uncooked mixture to flow to the bottom of the pan. Cook for 2 minutes longer, or until set. Sprinkle with half of the reserved vegetable mixture and half of the cheese. Cover, and cook for 2 minutes, or until the cheese melts. With spatula, fold the egg mixture in half. Place on the prepared baking sheet, and place in the oven to keep warm.

Coat skillet with cooking spray. Repeat with the remaining egg mixture, vegetable mixture, and cheese to cook another omelette. To serve, cut each omelette in half.

It's a hot spring day, perfect weather for a chicken salad. This is an easy, healthy, low-carb salad recipe. Chicken is high in protein and low-fat. Boneless chicken breasts fit into almost any meal plan. Buy the large frozen packaged ones, they are usually the best buy. Adding vinegar to this recipe makes your total glycemic index even lower.

Ingredients:


Dressing:
• 1/2 Cup red wine vinegar
• 4 Garlic cloves, minced
• 1 Tablespoon extra-virgin olive oil
• 1 Tablespoon finely chopped red onion
• 1 Tablespoon finely chopped celery
• Cracked black pepper, to taste

• 4 - 4 oz.chicken breasts, boneless and skinless
• 2 Garlic cloves
• 8 Cups leaf lettuce, washed and dried
• 16 Large black olives
• 2 Navel oranges, peeled and sliced


Preparation:

Dressing:
in a small bowl combine the vinegar, garlic, olive oil, onion, celery and pepper. Stir to mix evenly. Cover and refrigerate until needed.

Prepare a hot fire in a charcoal grill or heat a gas grill or broiler. Away from the heat source, lightly coat the grill rack or broiler pan with cooking spray. Position the cooking rack 4 to 6 inches from the heat source.

Rub the chicken breasts with garlic, then discard the cloves. Grill or broil the chicken until browned and just cooked through, about 5 minutes each side. Transfer the chicken to a cutting board and let rest 5 minutes before slicing into strips.

Arrange 2 cups lettuce, 4 olives and 1/4 of the sliced oranges onto 4 plates. Top with 1/4 of the chicken strips and drizzle with dressing.

Chipotle Chile Recipe

A chipotle is a smoke-dried jalapeño chili used primarily in Mexican-inspired cuisine like this recipe. There are many varieties of jalapeños which vary in size and heat. This chipotle chile has a great flavor and is hot and filling. It's lower in fat than most chili's because it is made with ground turkey, and low-fat cheese. It's heating up outside I'm craving something spicy.

Ingredients:

• 1 green bell pepper, cored, seeded and chopped
• 1 small onion, chopped
• 2 Teaspoon canola oil
• 1/2 Teaspoon chili powder
• 1 Teaspoon salt
• 1 Lb. ground turkey breast
• 1 15 oz. can tomato sauce
• 1 15 oz. can kidney beans, don't drain
• 1/2 Teaspoon canned chipotle pepper, minced
• 1/2 Cup shredded reduced-fat cheddar




Preparation:

In a saucepan, sauté bell pepper and onion in oil over medium heat 5 minutes. Add turkey and cook, stirring, about 5 minutes. Add tomato sauce, beans, seasonings, and chipotle. Stir well. Increase heat, stirring, until mixture comes to a boil. Reduce heat and simmer, uncovered, for 15 minutes. Serve with cheese sprinkled on top. Make 4 servings.

Chinese Stir-Fry Noodles & Vegetable recipe

In the mood for some Chinese food? This chinese stir-fry is a delicious vegetarian recipe. Its packed with beta-carotene from the carrots, and red bell pepper. The mushrooms are good for the immune system. You can also substitute the sugar snap peas with soy beans to add more protein. The Udon noodles are satisfyingly filling, enjoy your International dish experience.


Ingredients:

• 1 Pound Udon noodles, cooked
• 1 onion, thinly sliced
• 1 carrot, sliced julienne
• 1/2 Cup mushrooms, sliced
• 1/2 Cup sugar snap peas
• 1/2 Cup red bell pepper, sliced julienne
• 1 Tablespoon Sesame oil
• Soy sauce



Preparation:

In a skillet, heat sesame oil and add onions. Cook for one minute or so, stirring gently. Add carrots, cook for one minute, stirring. Add mushrooms, and soy sauce.

Stir into the other vegetables. Cover and cook for 5 minutes. Remove cover, add red bell pepper and peas and stir into the skillet. Cook on medium-low heat until the veggies are cooked but, not soft. Add the noodles and stir-fry well. Garnish and serve.

You can prepare Peruvian ceviche with just about any kind of fish. This ceviche recipe calls for salmon. Ceviche is a form of citrus-marinated seafood appetizer, popular in mainly Latin American countries like Peru, Panama, Ecuador, Mexico, Guatemala, Colombia, and Chile. Both finfish and shellfish are used. The fin fish is typically raw while shellfish is usually cooked.Ceviche is marinated in a citrus-based mixture, with lemons and limes being the most commonly used. In addition to adding flavor, the citric acid causes the proteins in the seafood to become denatured, which pickles or "cooks" the fish without heat. Traditional style ceviche was marinated up to 3 hours. Modern style ceviche usually has a very short marinating period. With the appropriate fish, it can marinate in the time it takes to mix the ingredients, serve, and carry the ceviche to the table. In Peru, ceviche is served with slices of cold sweet potatoes or corn-on-the-cob.

It is an original and typical dish of the fishermen of the American coast. Peru is often noted as the birthplace of ceviche as the various Peruvian civilizations that arose in the Pre-Columbian period greatly depended on fishing. Later, several important South American ports arose in Peru as a result of the Spanish Viceroyalty's capital being located at Lima (in Peru's central coast).

Ingredients:

• 14 oz. Salmon Filets
• 2 fl.oz. Fresh squeezed Orange Juice
• 4 fl.oz. Fresh squeezed Lime Juice
• 1 Red Onion, finely chopped
• 1 Red Capsicum (sweet pepper), deseed, finely chopped
• 2 Tablespoons freshly chopped cilantro
• 1 Chili pepper, deseeded and finely chopped
• Salt to taste



Preparation:

Wash salmon under cold running water, pat dry with paper towels, then dice into tiny chunks. Place the diced fish in a bowl together with the rest of the ingredients and mix to thoroughly coat the fish. Refrigerate for 2 to 4 hours before serving. Mix several times while marinating.
