Middle Eastern Recipe- Fava Bean Dip
This middle eastern dip is like hummus, but fava beans offer another great flavor. This bean dip is low fat and packed with protein, plus it's easy to make. If you are not experienced in cooking beans you can purchase the fava bean (broad beans) in Middle Eastern markets, where you will find frozen and canned fava beans.
• 1 Onion, chopped
• 3 Cloves garlic, minced
• 2 Tomatoes, chopped
• 3 Cups fava beans,
• 1 Teaspoon cumin
• 1/4 Teaspoon cayenne
• 3 Tablespoons Lemon juice
• 1/4 Cup fresh parsley
Sauté the onion and garlic in pan for about 4 minutes. Add tomatoes and cook for 4 minutes. Stir in the fava beans, cumin, and cayenne, set at medium-low heat for about 10 minutes.
Remove from the heat and mash the fava beans lightly. Put into a bowl and stir in the lemon juice and parsley.
Serve with dip warm with pita bread.
