Turkey Sushi - Kid's Recipe

This is a kid-friendly recipe that is so cool and healthy! Kids will never guess this is healthy. The whole-wheat couscous is fiber rich, so they will be full until dinner time. It has vegetables that provide Beta-carotene tucked inside, and the celery gives it an added crunch, which makes them fun for kids to eat. This recipe is perfect for the on-the-go grade schooler, or teens. If sliced turkey is not to your child's favorite, substitute with lean ham slices.

Ingredients:

• 1/4 Cup Cooked whole-wheat couscous
• 1 Teaspoon Light Mayonaise or Miracle Whip
• 2 Slices of low-fat Turkey slices
• 1/4 Cup carrots, grated
• 1/4 Cup celery, sliced
• 1/4 Cup red bell pepper, diced



Preparation:

Mix couscous with mayonaise to bind the grains together. Spread the mixture on two slices of turkey. Lay grated carrots, celery, and red bell pepper between the two slices. Roll up and cut crosswise into 1-inch pieces. Serve with string cheese and fresh fruit. Makes 1-serving.
