Brittany Murphey, the actress passed away today. She was one of my favorite actresses. If she was in the movie I would go see it. Dealing with food, recently I saw "The Ramen Girl". In real life one of her favorite foods was peanut butter and jelly sandwiches. Since just about anyone can make a peanut butter and jelly sandwich. Then here is a Peanut butter noodle recipe. We'll miss you Brittany.
This is a kid friendly Asian pasta recipe made with peanut butter. If you don't have Udon noodles, it also tastes great with spaghetti pasta. Peanut butter is a good source of protein for vegetarians. Peanut butter is also filled with a variety of vitamins like, niacin, vitamin E, and fiber. Peanut butter is filling, and will keep you going all day.
Ingredients:
• 1/2 Cup chicken broth
• 1 1/2 Tablespoons Ginger root, minced
• 3 Tablespoons Soy Sauce
• 3 Tablespoons Peanut Butter
• 1 1/2 Tablespoons Honey
• 2 Teaspoons Hot Chile paste
• 3 Garlic cloves, minced
• 8 Oz. Udon noodles
• 1/4 Cup Green Onions, chopped
Preparation:
In a large pot place noodles, add water and boil until done, drain. Set aside.
Combine chicken broth, ginger, soy sauce, peanut butter, honey, chili paste, and garlic cloves in a saucepan. Over medium heat cook until the peanut butter melts and is completely heated.
Add noodles and toss the noodles until they are completely coated. Garnish with onions and serve.
